Orecchiette Defined

originating in the Italian region of Puglia (Bari), this pasta resembles small ear lobes, hence the name orecchiette. Traditionally this pasta is placed on a plate, topped with cheese, and then fresh tomato sauce is added over paupiette - thin slice of meat or fish wrapped around a stuffing, rolled and secured with string.
