Al Dente Defined
A term, meaning "to the bite", used to describe the correct degree of doneness for pasta and vegetables. This is not exactly a procedure, but a sensory evaluation for deciding when the food is finished cooking. Pasta should retain a slight resistance when biting into it, but should not have a hard center.

- Massa ?Al Dente?: Hoje para o jantar cozinhei esparguete com carne de vaca e como tinha já ouvido falar da expressão ?Al Dente?, termo usado para descrever o ponto exacto de cozedura para que a massa fique boa, decidi surpreender-me a mim mesmo com o meu cozinhado. Fiz algumas pesquisas e descobri que a massa deveria cozer entre 8 a 11 minutos para ficar no ponto, mas faltou explicar se deveríamos usar lume brando ou forte. Eu optei pelo brando e passados 8 minutos, apaguei o fogão. Entretanto, a carne de vaca tinha já cozido uma hora e ainda estava dura. Peguei na massa, escorri-a, deitei-a no prato juntamente com a carne e provei. Acontece que a massa estava ainda mais dura do que a carne de vaca e o primeiro fio de massa que entrou na minha boca espetou-se entre dois dentes enquanto mastigava. Percebo agora o porquê da utilização do termo ?Al Dente?, é que a massa vai directa aos dentes. No final do jantar, tinha metida entre os dentes a grande maioria da massa e da carne que tentei comer.
